Color: White
Grape variety: Vermentino
Area: Brindisi, Salento, Puglia. About 100 m above sea level. The area is characterized by a temperate microclimate due to the proximity of the sea.
Ground: Shallow, medium texture, predominantly sandy.
Cultivation: Guyot (5,000 vines per hectare)
Harvest: Last week of August.
Winemaking: The destemmed grapes are kept in contact with the skins for a few hours in the cold before pressing, so as to extract the maximum aromatic potential from the skins. Fermentation takes place in steel at 15°C for 13-15 days, preserving the intact bouquet and natural aromatic profile of the grapes.
Refinement: In steel for 5 months.
Aging capacity: A wine that manages to keep its organoleptic characteristics intact for 3 years.
Organoleptic characteristics: Color: straw yellow; Perfume: delicate of white flowers, which blends with citrus and Mediterranean scrub notes; Palate: in the mouth the hints of thyme and rosemary confirm a sensation of elegance, freshness and persistent minerality.
Pairings: Fish first courses and appetizers. Excellent with cheeses.
Serve at: To be served at 10-12°C.
