The history of this champagne is relatively young, the first harvest of which dates back to 1959 but, only after having rested for 12 years in the underground cellars of Epernay, was it able to give its best in 1971, on the occasion of the pharaonic celebrations for the 2,500th anniversary of foundation of the Persian Empire of Cyrus the Great. Very few were chosen to taste it on that occasion, we can now all enjoy this one great version rosé, which confirms this style and the elegance of Dom Pérignon.

Elegant , complex and articulated, it gives the sight a very fine perlage and then opens up on hints of small red fruits and figs, vanilla, acacia honey and bread crust. Exuberant mouthfeel, tense and structured, creamy, fresh and balanced in a long saline finish.

It is at its best on a boiled lobster and seasoned with a drizzle of extra virgin olive oil, but can also be accompanied by an excellent Culatello di Zibello.
