In the heart of our ancient villages, from high balconies and white terraces, fortune whispers to passers-by. It is made of the clay that once nourished the vines. It is a flower when it opens, a fruit on a peach tree, a grain on a vine.
AWARDS AND RECOGNITIONS BY YEAR
Grape variety: Chardonnay.
Area: San Marzano, Salento, Puglia. About 100 meters above sea level.
Ground: Shallow soil with a medium-fine texture.
Cultivation: Guyot (4,500 vines per hectare).
Harvest: First and second ten days of August.
Winemaking: The grapes are destemmed and left to macerate for a few hours. The next phase is the soft pressing of the pomace with consequent cold static decantation so that it occurs naturally. Alcoholic fermentation takes place in stainless steel tanks at 12°C.
Refinement: In steel.
Organoleptic characteristics: Straw yellow colour; initially floral, enveloping scent with hints of jasmine flowers and wild rose, then of pineapple and bananas; elegant, fresh, delicate and mineral on the palate.
Pairings: To be combined with fish soups and broths with shellfish. Vegetables and soft cheeses.
Serve at: 12-14°C.
